Christiaan Eijkman (n. Nijkerk, 11 de agosto de 1858 - m. Utrecht, 5 de noviembre de 1930). Fisiólogo neerlandés. Es conocido por ser el descubridor de la importancia de las vitaminas en la dieta, identificando por primera vez la vitamina B1.
Eijkman was Director of the “Geneeskundig Laboratorium” (Medical Laboratory) from January 15, 1888 to March 4, 1896, and during that time he made a number of his most important researches. These dealt first of all with the physiology of people living in tropical regions.
Eijkman estudió también la llamada “anemia tropical”, a la que negó entidad propia; investigó la relación del metabolismo con factores geoclimáticos e ideó un test de fermentación, como hemos dicho.
Christiaan Eijkman (Nykerk, 1858 - Utrecht, 1930) Médico holandés que recibió en 1929 el premio Nobel de Fisiología y Medicina, compartido con Frederick Hopkins, por sus investigaciones sobre el beriberi. Fue médico militar en las Indias Occidentales y director del Instituto de Patología de Batavia.

Christiaan Eijkman (born Aug. 11, 1858, Nijkerk, Neth.—died Nov. 5, 1930, Utrecht) was a Dutch physician and pathologist whose demonstration that beriberi is caused by poor diet led to the discovery of vitamins. Together with Sir Frederick Hopkins, he was awarded the 1929 Nobel Prize for Physiology or Medicine.
Christiaan Eijkman. Médico holandés galardonado con el premio Nobel. Nació el 11 de agosto de 1858 en Nijkerk. Cursó estudios en la Universidad de Amsterdam y durante mucho tiempo trabajó en Sumatra, en donde permaneció dos años, y en Java.
