The drive to Castle Campbell is about an hour from Edinburgh and you'd probably want to spend from 1-2 hours there. It's only half an hour from Dollar to Stirling and you'd want to spend a few hours there as there's a lot to see. Watch out for opening times from October though as Castle Campbell is only open a few days each week during the winter.
