Baby Cakes, A Friend in Deed and MMMystery on the Friendship Express have a lot of Pie antics. Pinkie Apple Pie, Pinkie Pride and 28 Pranks Later are a little less focused on Pinkie Pie, but still good. Maud Pie and Gift of the Maud Pie are pretty Pinkie-centric too, although the humor in those is probably more Maud-centric overall.

Pinkie’s colouring is a bit off compared to both FIM Pinkie and toyline Pinkie(s), but aside from that easily one of my favourite MLP sets ever released, they’re absolutely gorgeous and LOOK AT HER
The few ponies who are willing to invite Stalliongrad to a party are also ponies that Pinkie prefers to stay away from. But there is a way out. You see, you cannot invite them to a party, but they may invite you to their party instead, and neither Pinkie or Celestia can say no to that kind of offer.
