Esta es una receta italiana, muy muy sencilla de hacer. Literalmente «brutti ma buoni», significa «feo pero bueno». Y este es realmente el caso. Pero finalmente encuentro una estética en esta forma cruda, casi mineral. Aquí hay tres ingredientes: azúcar, avellanas y claras de huevo. ¿La textura? Crujiente por encima y suave por dentro.
