His parents first settled in the Bronx where they ran a butcher shop and later moved to a New Jersey poultry farm. George spent many of his early years working on the poultry farm, helping his family through difficult times.

An accomplished banjoist, Segal played with Bruno Lynch and His Imperial Jazz before enrolling at Columbia University. After three years' military service, Segal resettled in New York in 1959, and that same year was cast in his first off-Broadway play.
